Organic farming, gives amazing

It all started in Dyrehaven north of Copenhagen in Denmark. For our restaurant Piil & Co we – Kim and Betina – were searching for the best rhubarb. The choice was obvious and logical. We chose the “Svendborg” rhubarb from the danish farmer Michael Balle.
Michael Balle has been an organic Farmer since 1998. “Svendborg” is a old Danish organic rhubarb sort, which is probably among the world’s absolute best because of the great taste and its deep red colour. By hand Michael harvests 600 tons of this wonderful rhubarb annually.
Together we bottled rhubarb juice directly from the Farm, and the result was amazing. Even those who have never before tasted rhubarb loves it.

Also for Bornholms Mosteri – Taste Is Always Key
Their rhubarbs are grown on Michael Balle’s organic Farm on the island of Fyn. They pick the berries and the flowers across the rest of Denmark and in the closest neighbouring countries.
Bornholms Mosteri is a juice mill located on the sunny Danish island of Bornholm in the Baltic Sea. They make delicious organic fruit juice and nectar while simultaneously creating jobs for socially marginalised people. People that due to psychical or mental disabilities are unable to manage an ordinary full time job.
They take pride in purifying the original taste of the raw materials to foster the potential of both the ingredients and their employees.
Responsibility is the crux of Bornholms Mosteri. Over half of their employees consist of vulnerable citizens and they have committed themselves to continually creating job opportunities for marginalized people on Bornholm.
Seen from the outside the juice mill probably looks like a fish factory more than anything else with its laid-back location on the harbour in Rønne. And that is in fact exactly what it used to be but as the herring disappeared it became the end of the fish factory and the beginning of Bornholms Mosteri.
Inside they chop, cut, press, squash, bottle and pack their fruit juice and nectar day and night. They taste gooseberries with a hint of bitterness and work intensely to the smell of newly pressed apples. they gently work with the long stems of the rhubarb and taste the characteristic sweetness or sourness of the season. Bornholms Mosteri was originally started as a municipal occupational project in 2006, but was in June 2013 taken over by two companies from Bornholm – the Michelin-starred restaurant Kadeau and the fishery company Espersen. The acquisition took place to keep the current employees at the juice mill, to develop the company further and to create even more job opportunities for socially marginalized people. Due to psychical or mental disabilities many of their employees are unable to manage an ordinary full time job elsewhere.
As of June 2015 the group of owners was expanded by an additional two shareholders – the fishery company Ocean Prawns and ‘Den Sociale Kapitalfond’ (the Social Capital Fund) that since the privatisation in 2013 has acted as lender for Bornholms Mosteri and contributed with ongoing competencies and knowledge about our social responsibility.
